Provence, the birthplace of rosé, provides the perfect setting for Maison Saint Aix’s vineyards, where Grenache, Syrah, and Cinsault grapes flourish in the region’s ideal growing conditions. The mineral-rich soils, abundant sunshine, and cooling Mistral winds create an environment where these classic Provençal varietals thrive. Maison Saint Aix’s vineyards, located at 420 meters above sea level, are among the highest in the AOP Coteaux d'Aix-en-Provence appellation. This elevation not only contributes to the purity and freshness of the grapes but also enhances the effect of the Mistral, which helps dry the vines and reduce the risk of disease.
In recent years, the estate has been revitalised, with a complete overhaul of both the vineyards and winemaking facilities. State-of-the-art equipment, including temperature-controlled stainless steel tanks and next-generation harvesting technology, ensures that the estate produces rosé of the highest quality. The 50 to 60-year-old Grenache vines provide a rich, concentrated juice, while younger vines bring a lively freshness to the blend. From temperature-controlled stainless steel tanks to pneumatic presses and next-generation harvesting machinery, every step is taken to ensure the production of the highest quality rosé that only Provence can offer. The domaine's 50-60 year old Grenache vines guarantee the highest quality juice, while the fruit from the younger vines brings a refreshing element to the blend. To maintain the harmony of the land, a busy replanting schedule is in place, replacing up to 4 hectares of vines each year with new ones.
