Cabernet intensity, without compromise.
Bin 707 is Penfolds’ boldest expression of Cabernet Sauvignon, embodying the House Style with uncompromising power and precision. First released in 1964 under Max Schubert’s pioneering vision, it was Australia’s first commercial Cabernet‑based wine. The 2023 vintage continues the legacy—ripe, multi-regional fruit fermented and matured in new oak for maximum depth and longevity.
Crafted from parcels across McLaren Vale, Coonawarra, Barossa Valley, and Padthaway, the 2023 sees fermentation completed and maturation undertaken primarily in new oak, giving the wine its signature intensity and structure. Presented in a sleek gift box, it's built for collectors and Cabernet connoisseurs who value bold flavours and cellar potential.

“Deep, impenetrable crimson hues. Macerated dark plum, blackberry aromas with layers of baking spices and crushed herbs, dark chocolate, earth, leather and boot polish. A celebration of Penfolds new oak mastery… elevated by peppermint, sage and spice providing aromatic lift and balanced by light charcuterie savoury notes.
An atypical 707, no Coonawarra in 2023, and perhaps just lacking a little poise and presence as a result. Dark berries, plenty of cedar and spice. Fleshy, waxy, not quite as finely etched as others might be.
This stellar Cabernet sources its fruit from Coonawarra, Barossa and Wrattonbully. It spent 16 months in new American oak hogsheads. An opaque maroon colour, there are notes of dusty red earth here. Chocolate and tobacco leaves, soy, dried herbs, florals and aniseed. Hints of animal skins add to the complexity. There is serious intensity and focus, exemplary balance. With time in the glass, notes of both red and black fruits become ever more dominant, primarily blackcurrants and raspberries, backed by a slippery texture and satiny tannins with real persistence on a very long finish. Finesse and power. The nose is gorgeous, the palate even better. A twenty year proposition. 14.5% alc
A young and characteristic expression of cabernet bursting with crushed violets, freshly squeezed cassis, pencil shave, spearmint, and extra dark chocolate, coconut husk, all playing their keynotes in unison, like expert fingers on the piano. On one side, there is a level of exotic and floral allure, with notes of incense, essential oils, and dried lavender; on the other, an Old World‑like reminder of cooking herbs, garrigue, and rolled tobacco leaf. Yet unashamedly Australian all the way through. You can savour and touch each and every element on the palate, thanks to the continuity of fruit, the vibrancy, balance, presence and weight of the tannins. It will last decades while already showing a great deal.
Such a bold statement of new American oak seems somehow old‑fashioned in this day and age of Australian cabernet, and yet there is a comfortable assurance about the inimitable Bin 707 model, promising that the woodwork will find its place with sufficient patience. The purity and precision of cassis and blackcurrant fruit on display is something to behold. In inimitable Bin 707 form, new American oak rises to the auspicious occasion, propelling and uplifting to mighty effect and monumental tannin impact. Fruit and oak sit apart for now, but each in their rightful place, and, as ever, promise great things indeed in a very long time to come. Line and length of the highest order confirm it will go the distance without the slightest doubt.
Penfolds has been a pioneer in the world of winemaking since its establishment in 1844 by Dr. Christopher and Mary Penfold. The company's success has been driven by a lineage of visionary winemakers who have pushed the development of the company to extraordinary, bold new heights. Mary Penfold's reign at the helm of Penfolds saw years of determination and endeavour, experimenting with new methods in wine production. In 1948, Max Schubert became the company's first Chief Winemaker and he propelled Penfolds onto the global stage with his experimentation of long-lasting wines - the creation of Penfolds Grange in the 1950s. Soon, the medals began flowing, and Grange quickly became one of the most revered wines around the world. In 2012, Penfolds released its most innovative project to date - 12 handcrafted ampoules of the rare 2004 Kalimna Block Cabernet Sauvignon. Today, Penfolds continues to hold dear the philosophies and legends that have driven the company's success since its establishment in 1844.
At Penfolds, winemaking is not just about producing wine; it is about creating something extraordinary that endures. The philosophy behind Penfolds is grounded in a balance between tradition and innovation. Every bottle is a reflection of this philosophy, blending the art of winemaking with scientific precision and modern technology. Penfolds’ commitment to quality has seen generations of winemakers continually refine their craft, while their constant curiosity drives them to experiment and explore new possibilities. Penfolds wines are a celebration of the unique Australian terroir, harnessing the country’s diverse regions to produce wines of exceptional character and complexity.
Penfolds’ philosophy extends beyond just the winemaking process—it’s about creating wines that can be enjoyed today or cellared for future generations. With a focus on balance, structure, and depth, every bottle is designed to stand the test of time. Whether it’s a rich, full-bodied red or a crisp, elegant white, Penfolds wines are crafted to bring people together, to inspire conversations, and to be savoured and shared. Their ability to evolve and adapt, while maintaining a consistent commitment to quality, has solidified Penfolds as one of the world’s most respected and celebrated winemakers.
