Harvested agave piñas are slow roasted in underground pits lined with hot stones and wood, then crushed to release sweet juices and fibres. The mash ferments with water, often with wild yeasts, before double distillation. Some regions use clay pot stills for an earthy accent. The result ranges from gently smoky and mineral to fruit driven and floral depending on agave, region and method.
Mezcal is a protected Mexican spirit made from agave. Unlike tequila, which uses only blue Weber agave, mezcal can be produced from many species such as Espadín, Tobalá, Cuishe and Tepeztate. Traditional methods and regional terroir create distinct styles across Oaxaca, Durango and beyond.
