The Huia Sauvignon Blanc was harvested from two BioGro-certified organic estate vineyards. The grapes were pressed, with the different vineyards kept in separate vessels. A 30% portion was fermented in neutral French oak to add further richness and complexity to the wine. Most of the wine was fermented using one yeast that is accepted as organic and non-GMO and the only other fermentation yeast used are wild yeasts that live in the winery.
Huia Sauvignon Blanc is delicious with fresh oysters, prawns, scallops, mussels cooked in Sauvignon Blanc, marinated fish with dill and goat, sheep and feta cheeses. Limey tropical notes on the nose, along with doughy lees and wet stone suggestions. Good texture as always and the flavour flows; very well integrated.
