This is a true representative of the Chablis style. The vineyard covers almost the entire geographical area of the appellation since we own about forty parcels located in 7 different communes. Located throughout Chablis, 40 parcels of Chablis offer a multitude of different Characteristics. Harvested and matured separately, to be assembled later to create a pure and rich Chablis. The average age of these vines is 40 years. This multitude of parcels allows Domaine Jean Dauvissat to obtain rich Chablis with a perfect balance between minerality and fruitiness.
After a rather mild and dry winter, 2022 began with spring frost, though damage remained very limited. An exceptionally warm spring made a significant difference, with temperatures rising in May marking the start of vegetation. Mid-flowering was observed by the end of May under excellent conditions. Summer was hot and dry, leading to a ripe and perfectly healthy harvest. We harvested our Chablis on September 7, 2022.
In the cellar, after a long pressing and static settling of 12 to 24 hours, fermentation occurred at 20°C using natural yeasts. Then came malolactic fermentation, followed by long maturation on fine lees. Maturation took place in both stainless steel and in demi-muids of 600 liters. After 12 months, these were assembled and continued their maturation process together for an additional 6 months. A slight fining and filtration were performed where necessary to ensure a wine that is clear and stable over time. This wine has not been treated with cold to preserve all aromatic finesse. Bottling took place on January 10-11, February 1, and March 21-22, 2024, approximately 18 months after harvest.
