The 2018 vintage of the Yarra Yering Dry Red Wine No. 2 was produced with fruit from Shiraz and Marsanne vines originally planted in 1969 along with Shiraz planted across the 1990’s, Mataro & Viognier drawn from vines planted from 1984 to 1995. The fruit was all hand harvested, transferred to the sorting table, de-stemmed, and crushed into the half-tonne open fermenters. Contributing to the structure and aroma, a little stalk is returned to some of the fermenters. French oak barriques were used in the maturation process, 30% being new, before blending and bottling.
