An elegant Speyside single malt shaped by The Macallan’s collaboration with JING Tea. The Macallan Harmony Collection Jing Phoenix Honey Orchid Tea is a limited release inspired by the aromatic depth of single garden oolong from Phoenix Mountain in Guangdong. Matured primarily in sherry seasoned American oak with supporting European oak and a subtle influence from ex bourbon casks, it captures a spectrum of honeyed fruit, soft florals and restrained oak sweetness. The aroma leads with peach, nectarine and delicate orchid notes alongside hints of dried tropical fruit, citrus warmth and gentle toffee.
The palate follows with a silky, medium bodied profile that layers honeyed malt, peach and apricot compote with light vanilla and measured oak spice. A touch of leafy astringency nods to the tea that inspired the release while a faint roasted edge reflects the presence of European sherry oak. The finish is moderately long and quietly expressive with lingering honey, apricot and a soft floral accent. This whisky’s balance of fruit, perfume and fine tannin lends natural harmony to dishes such as lightly spiced duck or sweet spanner crab.
