The Gabrielle vineyard was planted in 2004 and became the region's first organically certified vineyard in 2007. In November 2019, a new high-density Chardonnay vineyard was planted named after the owners' eldest daughter.
The Ten Minutes By Tractor Wallis Chardonnay 2021 is a result of a La Niña weather pattern controlling the season, which delayed bud burst and flowering due to wet spring and start to summer. However, the below-average temperatures and rainfall over summer allowed the grapes to ripen slowly but evenly, resulting in great concentration of flavor and good natural acidity. The fruit was handpicked and hand-sorted, then chilled overnight before being whole bunch pressed to stainless steel. The juice was settled for 24 hours, then racked to barrel taking the light fluffy lees. The wine was fermented using indigenous yeasts and partial natural malolactic fermentation was allowed to occur in 73% of the wine. Some occasional bâtonnage was done to individual barrels. The wine was aged for 10 months in 1-year-old French oak. On the nose, the wine has aromas of flint and orange blossom, leading to a silky, fine palate with elements of marmalade and grapefruit. The wine has a lovely purity and balance, reflecting its class and years of toil in the vineyard. A linear line of acid underlying the fruit adds precision and a lovely persistence to the wine. This Chardonnay pairs well with flounder, capers and beurre blanc and is best drinking between 2023-2030.
