This single malt whisky is aged in a combination of French and American oak casks, every tiny batch expressing the unique characteristics of both styles. With incredible complexity and length, Double Cask has a rich palate of sweet malt, dried apricots, honey and freshly baked bread. DC115 is crafted from small parcels of 10 distinct single casks, and bottled at 47.7% ABV. With the oldest component aged 17 years and the youngest at 6 years, it unfolds with layers of complexity.

This dedication to craftsmanship, paired with the natural elements of Tasmania, allows Sullivans Cove to create whiskies with unparalleled depth and character. Their focus on minimal intervention and maximum expression means each bottle tells a story of its own, embodying the subtleties and complexities of its unique terroir.
The first thing to note from the nose is the wonderful buttery nasal texture, absolutely unctuous! Savoury, fatty, syrupy and briny notes come next (roasted Brazil nuts, maple syrup, pork crackling, miso butter). As the deep savoury notes mingle with boiled lemon lollies, barley sugars and warm apple cider in the mid-section, a beautifully fresh and green herbal layer takes its place amongst the top notes, progressing into a broad and all-encompassing fruit profile of orchard fruits (nashi pear, apple), tropical fruits (kiwi, watermelon), and stone fruits (nectarine, plum, peach). As the nose moves forward, Fruit Tingles join the lemon lolly note along with aloe vera, and a wave of sherbety super-sweet confection (specifically Flying Saucers, a lolly with a crisp wafer outside and sherbet inside).
With a bright and fruit-forward entry to the palate, the spirit opens – thick, juicy and full of watermelon and nashi pear, backed by the firm structure of oak with various subtle confectionary notes. The briny miso note, also spirit-derived, works in tandem with the fruity notes before a wave of chalk love-heart candies and citrus come forward. Next comes a gorgeous nutty depth, enhanced by the earthy and fruity base notes of eucalyptus, spiced mango chutney and biscuity malt - this is a beautifully formed palate with great dimension and structure.
The most beautiful wave of watermelon welcomes the finish, in all its forms! Watermelon taffy, watermelon hard candies and fresh watermelon with the rind. A playful burst of oak spice livens up the back, and at the same time, a flush of mandarin peel and tangerine coats the palate. The texture is thick, and the finish lingers with sweet citrus, the gentle and broad grip of American oak, and the fine tannin of French oak, provide a long-lasting structure.
