Sullivans Cove Old & Rare American Oak Single Cask 18 Year Old Single Malt Whisky is a highly limited single cask release that showcases the distillery's celebrated approach to long-aged Australian whisky. Part of the Old & Rare collection, this expression is drawn from one individual American oak ex-bourbon cask, highlighting the unique character that only extended single cask maturation can deliver. Cask Nº TD0125 was filled in August 2006 and decanted in September 2024, reaching 18 years and 1 month of maturation. Aged in a single 200L American oak ex-bourbon cask, it reflects the influence of this cask style through layers of vanilla, coconut and gentle oak sweetness that complement Sullivans Cove's fruit-forward spirit. Bottled at a natural cask strength of 47.1% ABV, only 212 bottles were produced, making this an exceptionally scarce release within the Sullivans Cove portfolio.

Rich, full-bodied and remarkably composed, the whisky reveals its complexity gradually with aromas of marshmallow, dried apricot, brown sugar, milk chocolate, browned butter and delicate florals. The palate is generous and textured, unfolding with honey, buttery pastry, apple tea cake, toasted muesli and a distinctive waxy richness before giving way to a long, elegant finish of cinnamon, clove, anise, dried cranberries, mulberries and orange marmalade. Presented in a handmade solid oak presentation box with a letter of authenticity signed by the Distillery Manager, Cask Nº TD0125 is a rare expression of Tasmanian single malt whisky that rewards slow appreciation and is a fitting addition to the collections of discerning whisky enthusiasts.
