Sullivans Cove American Oak Second-Fill Single Cask Single Malt Whisky 700ml (TD0424) is a limited Tasmanian single malt whisky drawn from one individual cask. Distilled in September 2013 and decanted in October 2024, this release matured for 11 years in a single 200L American oak cask. The cask had previously held an older batch of Sullivans Cove single malt, making this a second-fill expression designed to showcase more of the distillery’s spirit character. Second-fill maturation allows the oak influence to remain present yet measured, giving space for the whisky’s briny, malty and fruit-forward qualities to come through. Bottled unflocked and unfiltered at 48.1% ABV, Cask Nº TD0424 yielded only 259 bottles. This makes it a highly limited release within the Sullivans Cove single cask portfolio.
The whisky presents a vibrant and expressive style, balancing citrus, fruit, vanilla, cocoa and spice. Its aromatic profile opens with lemonade, mandarin, fruit salad, kiwi, nectarine and banana musk, supported by honey, Madeira cake, vanilla custard and bran cereal. The palate is silky, smooth and full-bodied, showing sweet coconut, vanilla sponge, toffee, marshmallow, floral lift and a touch of sweet coffee. The finish extends into citrus pith, vanilla wafers, dehydrated apple, nectarine, peach, coconut oil, sage, creamy porridge, cocoa and a subtle saline edge. It is a whisky that highlights both the richness of American oak and the distinctive core character of Sullivans Cove spirit. Presented as a single cask release from Tasmania, TD0424 offers rarity, clarity of provenance and a focused expression of second-fill American oak maturation.
