Sullivans Cove's American Oak Second Fill (TD0069) showcases a depth and refinement that can only come with age. After 17 long years of maturation, this 300L American oak second-fill cask yielded just 419 bottles, bottled at 48.7% ABV. This rare release joins the exclusive Old & Rare range. Typically won by ballot, this is an ultra-rare opportunity to secure one of Australia’s oldest whiskies.
The 2024 Global Distillery Manager of the Year describes this release as "roasting walnuts, with visions of every chocolate-coconut bar known to humankind flashing before your eyes. This whisky is seriously complex, with a brilliant narrative and flow throughout."
Sullivans Cove Second-Fill casks are an exceptional part of the distillery’s offerings. A selection of the finest American and French oak barrels are refilled, resulting in a gentler oak profile that allows the distillery's spirit to truly shine. The range includes both American Oak and French Oak refill casks, with Old & Rare releases becoming a favourite among both staff and whisky lovers. Expect the typical flavours of each oak type but in a more delicate and refined style, showcasing Sullivans Cove’s distinct spirit character in its purest form.

Coconut and Bounty bar notes meld seamlessly with Swiss milk chocolate, creating an indulgent sweetness. Layers of raspberry jam, fig jam, butterscotch, and fruit leather. Sweetness with a touch of saltiness.
The sweetness is enhanced by white chocolate and buttery shortbread, with sugared almonds adding a nutty touch. A bright burst of orange blossom water in the corners brings a lively, floral note.
An earthy yet vibrant pine forest floor note emerges, punctuated by a burst of Campari-like flavour with more body. The finish is rounded out with rich, browned sugars, evoking sticky date pudding and treacle.
