After 16 years of patience, yielding just 213 bottles, Sullivans Cove presents TD0207: a celebration of the opulence of American oak. This release showcases the remarkable potential of Sullivans Cove’s spirit. Old & Rare American Oak single casks are the distillery's hallmark for crafting decadent drams that are silky smooth in texture, emphasising the spirit's sumptuous balance of freshly cut fruits and pure vanilla bean ice cream. Luxurious throughout, its vibrancy and elegant complexity extend well beyond the palate in a generously sustained finish.
Old & Rare American Oak ex-Bourbon Single Cask TD0207 was distilled in July 2007 and decanted in March 2024, maturing for 16 years and 7 months in a single 200L American oak ex-Bourbon cask. Bottled at 47.6%, this cask produced just 213 bottles.
Sullivans Cove Second-Fill casks are a truly special part of the distillery. A selection of the best American Oak and French Oak barrels are refilled, resulting in whiskies with a gentler oak profile that lets the spirit shine. The range includes American Oak and French Oak refill casks, including Old & Rare releases. Second-Fill bottlings have rapidly become favourites among both staff and whisky lovers, offering the typical flavours of each oak type in a more delicate and restrained style. The Second-Fill range represents the purest form of Sullivans Cove’s distinct spirit character.

Caramel popcorn and fudge add a playful touch. A bright timber note of Huon pine weaves through, alongside the softer orange and herbal tones of Aperitivo Cappelletti.
Sugared almonds adding a nutty touch. A bright burst of orange blossom water in the corners brings a lively, floral note.
Its generous and sustained finish, marked by creamy textures, notes of candied lemon, toffee, and a hint of deep berry richness.
