Sullivans Cove French Oak Second Fill Single Cask Single Malt Whisky 700ml (TD0423) is a limited Tasmanian single malt whisky drawn from one individual cask. This release was distilled in September 2013 and decanted in September 2024, reaching 11 years of maturation. It was matured in a single 300L French oak ex-tawny cask that had previously held an older batch of Sullivans Cove single malt. As a second-fill cask expression, it allows the French oak influence to remain rich and present while giving greater space to the distillery’s malt-driven spirit character. Bottled unflocked and unfiltered at 47.5% ABV, Cask Nº TD0423 yielded only 402 bottles. This makes it a highly limited single cask release within the Sullivans Cove French Oak range.
The whisky is full, fruit-forward and layered, showing the distinctive relationship between Sullivans Cove spirit and second-fill French oak ex-tawny maturation. Its aromatic profile leads with dried apricot, pineapple, apple juice and damson plum, supported by softer notes of plum blossom, cream, malt biscuit and subtle earthy complexity. The palate is silky and full-bodied, opening with a bright estery lift before moving into citrus, ginger, tropical fruit and confectionery-like sweetness. Despite its richness, the whisky avoids excessive sweetness, keeping a lively and balanced profile through the mid-palate. The finish brings gentle tannin, sherbet-like acidity, strawberry and cream, apple juice, kiwi fruit, fresh fig and herbal spice.
