Each sip reveals new facets, with layers seamlessly transitioning from one to the next and lingering long after. It’s a wild journey, expertly contained by the structure of the oak, demonstrating a true mastery of balance. Upon opening, a sense of depth immediately fills the nostrils with dark fruits and sticky maple syrup, intertwined with dark, heavy honey and dried roses. As you sip, flavours of dates, nutmeg, and tiramisu emerge, followed by zippy citrus and chocolate-powdered wafers that add balance and complexity. So good.
Aged for 10 years and 10 months in a 225L French oak ex-Tawny cask, single cask TD0402 embodies the classic Sullivans Cove French Oak ex-Tawny style. Bottled unflocked and unfiltered at 47% ABV, this cask yielded just 325 bottles.
Being matured in French Oak ex-Tawny barrels, this whisky brings together Sullivans Cove Distillery and the powerhouse Australian fortified wine industry, delivering rich flavours of Christmas spice, chocolate, and dark dried fruits. As a single cask bottling, every tiny batch is different, showcasing the unique characteristics of each barrel.

As the nose unfolds there are layers of dark fruits and sticky maple syrup, intertwined with dark, heavy honey and the floral scent of dried roses.
The body is full and well-developed, showcasing salted caramel and plum jam alongside the tartness of blackberry and the buttery richness of sweet pastries and apricot crumble.
It lingers with the sweetness of quince paste and toasted fig, merging into dark chocolate and espresso.
