Sullivans Cove French Oak Ex-Pinot Noir Single Cask Single Malt Whisky 700ml (SC0387) is a limited Tasmanian single malt whisky drawn from one individual cask. This release was distilled in August 2017 and decanted in September 2024, reaching 7 years of maturation. It was matured in a single 225L French oak cask that previously held Tasmanian Pinot Noir. This cask style brings together Sullivans Cove’s distinctive malt spirit with the fruit-driven character of Pinot Noir and the structure of French oak. Bottled unflocked and unfiltered at 46.1% ABV, Cask Nº SC0387 yielded only 379 bottles. As a single cask bottling, it reflects the individuality of one barrel rather than a blended house style.
The whisky is expressive, layered and distinctly wine-cask influenced, while still retaining the briny and textural character associated with Sullivans Cove. The nose opens with nutty warmth, eucalyptus, ginger and kunzea, before moving into blackcurrant jelly, crème de cassis, tea leaves, old tobacco box and sandalwood. The palate is silky and seamless, showing lime cordial, crème brûlée, raspberry jam, coconut, mocha, oak spice and jammy red fruits. French oak contributes spice and structure, while the Pinot Noir cask influence brings darker fruit, savoury depth and a rich mid-palate. The finish is long and resonant, with fine oak grip, anise, mandarin pith, red jellybeans, truffle, dark chocolate, white pepper and clove. This is a rare and highly limited expression of Sullivans Cove, showcasing the meeting of Tasmanian whisky craft and Tasmanian wine-cask maturation.
