One barrel, 121 bottles—Tasmania at its rarest.
Sullivans Cove Old & Rare HH0499 is a singular expression from one of Australia’s most revered whisky distilleries. Distilled in 2000 and bottled in 2018 after 17 years of slow maturation in a single American oak ex-bourbon cask, this release is strictly limited to just 121 bottles—each one individually numbered, never to be repeated.
Tasmania’s cool coastal climate and Sullivans Cove’s meticulous cask management are on full display here. Cask HH0499 imparts rich layers of vanilla, crème caramel and baked stone fruit, with the oak delivering soft tannins and deep, well-integrated spice. Founded in 1994 in Hobart, Tasmania, Sullivans Cove Distillery has established itself as a pioneer in the world of single malt whisky. With a focus on creating the finest expressions of Tasmanian whisky, Sullivans Cove has garnered global recognition, including being named World’s Best Whisky three times in 2014, 2018, and 2019. The distillery's success lies in its dedication to small-batch production, using only 100% Tasmanian ingredients and traditional distilling methods.
Operating in one of the most pristine environments for whisky production, Sullivans Cove distillery uses the region’s pure, clean water and fertile barley-growing land to craft its exceptional whiskies. From the unique Tasmanian-built pot still known as "Myrtle" to the bespoke barrel maturation process, every aspect of Sullivans Cove’s production reflects the distillery’s commitment to excellence.
Sullivans Cove is rooted in the belief that whisky should never be rushed. With each cask nurtured to its natural peak, the distillery's philosophy embraces patience, precision, and quality. By using only the finest Tasmanian malted barley and pure local water, Sullivans Cove produces a whisky that is unique to its environment.
The distillery’s commitment to producing world-class whiskies is reflected in its small-batch, single cask approach, where no two batches are the same. This dedication to craftsmanship, paired with the natural elements of Tasmania, allows Sullivans Cove to create whiskies with unparalleled depth and character. Their focus on minimal intervention and maximum expression means each bottle tells a story of its own, embodying the subtleties and complexities of its unique terroir.
