      Sullivans Cove Second-Fill casks are a truly special part of the distillery. Selected American Oak and French Oak barrels are refilled, which imparts a gentler oak profile, allowing the whisky’s spirit to shine. The range includes Old & Rare refill casks and features a more restrained, delicate style that has become a favourite among staff and fans alike. The Second-Fill range captures the distillery’s distinct spirit character in its purest form.

      Dried apple wheels blend with vanilla seeds. The sweetness is enhanced by white chocolate and buttery shortbread, with sugared almonds adding a nutty touch. A bright burst of orange blossom water in the corners brings a lively, floral note.

      A sweet, ripe grapefruit leaning towards pomelo adds a citrusy brightness. The finish is rounded out with rich, browned sugars, evoking sticky date.
