      Sullivans Cove Old & Rare American Oak TD0064 is among the most prized releases from the distillery’s revered second-fill program—a whisky matured for over 17 years in a single 300L American oak cask that had previously held only one other Sullivans Cove malt. Never influenced by bourbon or sherry, these barrels exist solely within the distillery’s ecosystem, showcasing the purest expression of Tasmania’s most iconic single malt.

      With its long maturation and restrained oak influence, TD0064 allows the spirit’s core character—bright fruit, soft florals, and a gentle earthiness—to shine through. It’s an exceptional display of what time and patience can unlock: layers of citrus, tropical fruit, biscuit and spice, all tethered by a graceful tannic structure and textural depth.

      Only a handful of casks ever reach this age under Sullivans Cove’s eye, and fewer still make it into the Old & Rare collection. Bottled unfiltered and presented in a handcrafted walnut case, TD0064 is a deep, reflective whisky that rewards slow drinking and close attention.

      Peach, toasted oats, flamed orange, Anzac biscuits and a thread of scorched red earth.

      PALATE
      Juicy and Complex

      Waves of jammy tropical fruit, taffy, honey-soy glaze and spiced puff pastry glide over a grounded, earthy base.

      FINISH
      Floral and Lingering

      Salted cantaloupe, chamomile and coconut icing taper into a long, malty fade that lingers with warm tropical air.
      Werther’s Originals and pickled walnuts offer an intriguing juxtaposition of sweet and briny, hinting at the spirit's complexity. Piney aromas and fresh herbs add a fresh twist to a wonderfully decadent dram. - Kent Street Cellars
