Sullivans Cove American Oak Second Fill Single Cask TD0059 is a limited-edition release drawn from a single cask previously used to mature Sullivans Cove whisky. Second-fill American oak brings finesse and restraint, offering up a more nuanced take on their signature style—less overt bourbon sweetness, more layered complexity. Just 414 bottles were filled.
Made from 100% Tasmanian malted barley, distilled in the custom-built copper pot still affectionately named Myrtle, and matured slowly in the island’s cool maritime climate, this is small-batch craftsmanship at its peak. Expect classic American oak tones—vanilla and ripe stone fruit—lifted by gentle spice and a textural, mouth-coating finish.
Every bottle is a snapshot of the distillery’s ongoing dialogue between nature, time and technique. It’s not just whisky—it’s a moment sealed in oak.
