      Shaw + Smith Pinot Noir 2025 is an elegant, aromatic expression of Pinot Noir sourced from the cool, elevated reaches of South Australia’s Adelaide Hills. The majority of the fruit comes from Shaw + Smith’s Lenswood and Piccadilly vineyards, where the vines grow on loam soils over clay and quartz. These higher-altitude sites experience cool and relatively wet conditions that are particularly well suited to producing Pinot Noir with fragrance, natural acidity and fine structure. The 2025 season was defined by a long and even growing period that encouraged healthy bunch development and consistent ripening. Although conditions were warmer and drier than those experienced in several preceding vintages, cool overnight temperatures helped the grapes retain freshness and high natural acidity. The fruit was harvested by hand between 10 February and 1 March 2025.

      At the winery, the bunches were carefully sorted to remove any fruit that did not meet the required quality standards. Approximately 80% of the grapes were destemmed, leaving a measured proportion of whole bunches to contribute aromatic lift, spice and structural complexity. Fermentation proceeded slowly and gently to preserve the delicacy of the fruit while extracting sufficient flavour, colour and tannin. The wine was then basket pressed into French oak puncheons, where it matured for approximately eight months. Bright red fruit, mandarin peel and violet define the aromatic profile, followed by savoury spice, undergrowth and subtle bitter-herbal nuances on the palate. Fine, integrated tannins provide shape and length, supporting impressive fruit concentration while preserving the wine’s graceful, medium-bodied character. Shaw + Smith recommends enjoying the wine now or cellaring it until approximately 2032.

      Shaw + Smith

      Shaw + Smith was founded in 1989 by cousins Michael Hill Smith MW and Martin Shaw, with a focus on producing wines that reflect the cooler climate of the Adelaide Hills. They specialise in varieties that thrive in the region, including Sauvignon Blanc, Riesling, Chardonnay, Pinot Noir, and Shiraz. The winery owns three vineyards located in Lenswood, Piccadilly, and Balhannah, each carefully managed to yield the best possible fruit.

      With a commitment to sustainability, Shaw + Smith emphasises vine and soil health while maintaining low yields. This hands-on approach, along with state-of-the-art facilities at their Balhannah winery, ensures complete control over the winemaking process, allowing the team to capture vibrant, modern expressions of their varieties and terroir.
