Shadowfax Macedon Pinot Gris 2025 is a refined cool-climate expression of Pinot Gris sourced from the highly regarded Little Hampton vineyard in the Macedon Ranges, one of Australia's premier regions for aromatic white wines. Shadowfax has built a reputation for crafting wines that balance purity of fruit with texture and complexity, and this release is a fine example of that philosophy. The fruit was harvested at optimal ripeness to preserve freshness while achieving full flavour development. Fermentation techniques were carefully selected to build texture and mouthfeel without sacrificing varietal character. A portion of the wine was matured on lees, contributing additional depth and a subtle creamy complexity. The cool conditions of the Macedon Ranges allowed for a long growing season, resulting in excellent flavour concentration and natural acidity.
The 2025 vintage delivers remarkable balance between richness and freshness. Aromas of pear, nashi pear and melon are layered with hints of spice and delicate floral notes. On the palate, the wine displays impressive texture and weight, supported by vibrant acidity and a distinctive mineral edge. Lees influence contributes subtle honeyed and nougat-like nuances that complement the fruit profile beautifully. Despite its generosity, the wine remains elegant and precise throughout. The finish is long, refreshing and finely structured, making it an excellent partner for seafood, roast poultry, creamy pasta dishes and soft cheeses. It is an expressive and age-worthy Pinot Gris that showcases the strengths of the Macedon Ranges region.
