    Winemaker Paul Pujol refined his trade working in France’s classical wine regions, the Languedoc, Sancerre and, crucially, Burgundy and Alsace. His traditional aesthetic — respectful, patient, vineyard-focused – resonates in Prophet Rock's wines, and frees them to express the unique tenor of our sites. Each glass, then, embodies both the old world and the new, past and present unified by place. At Prophet’s Rock, they are committed to sustainable wine production. Their vines sit comfortably in the natural environment that surrounds them, and they treat these surroundings with care. Prophet’s Rock is a member of Sustainable Winegrowing New Zealand. The two stunning vineyards that combine to make Prophet's Rock's Pinot Gris are located in the Bendigo and Pisa sub-regions of Central Otago, facing each other across Lake Dunstan.

    The wine's journey starts in the vines, where low yielding fruit is grown with great concentration and flavour, followed by harvesting done by hand. Prophet's Rock Pinot Gris and Riesling are slowly and gently whole-bunch pressed, then undergoes long slow ferments in barrel and aging on yeast lees prior to bottling just before the next harvest. In barrel, the wines go through spontaneous malolactic fermentation and receive extended élevage.

    A textural delight, with powerful, delicious aromas and flavours of ripe apple, nashi pear, touches of honeysuckle. This is a truly aromatic expression of Pinot Gris and a marvellous food wine. Pinot Gris has always been a strong focus for Prophet's Rock.

    Scents that start stony and savoury, a whiff of kombu and mushroom over peach, pear fruitiness. The palate has nashi pear, a lick of pink grapefruit freshness, halva and cashew nutty savouriness, a lick of truffle-like quality too. Slippery texture that draws long and finishes with lingering sweet spice and a little stony mineral quality. Excellent here, but drink young. – The Winefront
