From parcels in Chassagne-Montrachet and the Hautes Côtes de Beaune, this wine balances the supple texture of richer clay soils with the tension and minerality of high-altitude limestone plots.
Fermented naturally and aged for 14 months in 350-litre barrels before a brief rest in stainless steel, it undergoes full malolactic fermentation and is bottled unfined and unfiltered. The result is a wine of crystalline focus, layered with citrus, green apple and white florals, carried by a fine saline thread. It’s a benchmark Aligoté from a producer better known for his world-class Chardonnays, expressing clarity, depth and lift in equal measure.
