      Cool-climate purity, mineral precision and refined texture define the Penfolds Bin 311 Chardonnay 2025. This multi-regional Australian Chardonnay is produced from fruit sourced across the Adelaide Hills, Tasmania and Tumbarumba, reflecting Penfolds’ philosophy of selecting grapes from regions where they grow best and most closely suit the intended wine style. Since the 2017 release, Bin 311 has evolved from a single-region wine into a blend of distinguished cool-climate Chardonnay sites. The 2025 growing season delivered mild and generally settled conditions across the three sourcing regions, supporting slow ripening, preserved acidity and detailed aromatic development. Cool nights in the Adelaide Hills helped retain freshness and fragrance, while Tasmania’s consistently cool conditions encouraged gradual flavour development and fine structural definition. Tumbarumba’s altitude and cold-air drainage moderated summer temperatures, extending the ripening period and contributing tension to the finished wine.

      The wine underwent barrel fermentation and was matured for eight months in French oak barriques, of which 23% were new, allowing the oak to provide shape and texture without overwhelming the fruit. Pale straw with a subtle green tinge, it opens with focused aromas of Packham and Nashi pear, lemongrass, Thai basil and an intricate range of citrus characters. Notes of yuzu, finger lime, kaffir lime leaf, lemon curd and vanilla brûlée are complemented by flinty nuances of struck stone and wet steel. The palate is finely wrought and energetic, combining custard apple and citrus fruit with lees-derived creaminess and a gentle yoghurt-like texture. Savoury notes of daikon radish, green pepper and wet stone introduce complexity, while tight acidity and chalky phenolics carry the wine through a long and precise finish. Seamlessly integrated French oak reinforces the clarity and restraint of the Bin 311 style, and Penfolds recommends a peak drinking window extending through 2040.

      Penfolds

      Penfolds has been a pioneer in the world of winemaking since its establishment in 1844 by Dr. Christopher and Mary Penfold. The company's success has been driven by a lineage of visionary winemakers who have pushed the development of the company to extraordinary, bold new heights. Mary Penfold's reign at the helm of Penfolds saw years of determination and endeavour, experimenting with new methods in wine production. In 1948, Max Schubert became the company's first Chief Winemaker and he propelled Penfolds onto the global stage with his experimentation of long-lasting wines - the creation of Penfolds Grange in the 1950s. Soon, the medals began flowing, and Grange quickly became one of the most revered wines around the world. In 2012, Penfolds released its most innovative project to date - 12 handcrafted ampoules of the rare 2004 Kalimna Block Cabernet Sauvignon.
