Founder of Dysart House, William Henry Ellis was transported to Tasmania from England in 1827 for embezzlement. Shortly after his arrival, he was granted a special release and by 1836 was licensed to sell spirits from the now Old Kempton property in Tasmania's Midlands. In memory of Ellis, Old Kempton Distillery releases their own special cask strength single malt whiskies. They showcase the purest Tasmanian water and barley, handcrafted using traditional methods and matured in specially-selected oak casks.
