Lucien le Moine is committed to producing wines of excellent purity. The lees are gently stirred throughout winter in order to nourish the wines, providing the complexity and richness. The malolactic fermentation occurs the following spring. The wines are bottles by gravity with no filtration or pumping. This ensures maximum freshness and a high level of CO2, allowing the winery to use a minimum amount of sulphur. For those same reasons, it is recommended decanting if this wine drank in its youth.
Lucien Le Moine Bourgogne Blanc comes from old vines planted in clay-limestone soils which are worked under respectful agriculture and harvested by hand. The grapes are gently pressed and the must obtained ferments spontaneously with native yeasts. 12 months on its lees in French oak barrels.
