Kilchoman Distillery was established in 2005 and is true to Islay's rich farm distilling heritage. The distillery uses local peat cut in the traditional way, slowly distilling all spirits by hand, allowing maturation to occure in traditional dunnage warehouses, and bottling on site without any colouring or chill-filtration.
The Kilchoman 100% Islay 10th Edition Single Malt Scotch Whisky is distilled from their 2007, 2009, and 2020 barley harvests prior to a minimum of 9 year maturation of 39 bourbon barrels and 2 oloroso sherry casks. The combination of lightly peated barley matured in both sherry and bourbon casks creates an intense combination of floral sweetness, layers of rich fruity character, and soft maritime peat smoke.
