      Made from fermented grape pomace, using 40 percent red, 40 percent white, and 20 percent rosé varieties grown on the estate, the spirit is distilled in copper stills with fractional columns and then gently diluted with ultra-pure reverse-osmosis water. The result is a crystalline tsipouro that reflects its mountain origin: clear, fragrant, and refined.

      Katogi Averoff

      Katogi Averoff is one of Greece’s most emblematic mountain wineries, rooted in the vision of its founder Evangelos Averoff. In the late 1950s, Averoff planted the first Cabernet Sauvignon vines in Greece on the steep slopes of Mount Pindus, laying the foundation for a new era of high-altitude viticulture. What began as a cellar experiment in Metsovo grew into a pioneering estate that combined local traditions with international expertise, introducing both indigenous revivals and classic French varieties to the Greek vineyard.

      Today, Katogi Averoff remains a family-driven enterprise, now led by Averoff’s descendants and a close team of viticulturists and winemakers. The Yiniets vineyards, planted between 950 and 1050 metres, are among the highest in Greece. Extreme conditions, native wildlife and slow ripening seasons demand resilience and precision, resulting in wines of authenticity and character. The estate continues to expand its vineyards while nurturing local varieties such as Vlachiko and Pyknoassa alongside international plantings.
