Grown on ancient Cambrian soils, this wine reflects both the natural concentration of the site and Jasper Hill’s minimal-intervention philosophy. In the glass, it shows a deep crimson core with purple hues, signaling intensity without excess. Founded in 1975, Jasper Hill Wines is a small, family owned and operated organic vineyard and winery in Heathcote, central Victoria. Set on ancient Cambrian soils north of the township, Emily’s Paddock and Georgia’s Paddock have become benchmarks for site driven Australian wine, shaped by geology as much as by season.
From its earliest plantings, Jasper Hill has focused on expressing the complexity of Heathcote’s red soils through careful, hands on viticulture. The vineyards are dry grown and organically managed, with each vine cane pruned by hand and guided through shoot thinning in spring and bunch thinning in summer. This close attention to vine health and balance underpins wines of depth, structure and clarity, reflecting place rather than process.
Remaining intentionally small, the estate oversees every stage on site, from vineyard to bottling. The result is a collection of wines that speak quietly yet confidently of Heathcote, carrying the character of ancient soils and thoughtful custodianship.
At Jasper Hill, the philosophy begins in the soil. Compost, compost teas and cover crops are used to protect microbiology and sustain the natural nutrient cycle, reinforcing the vitality of vines that are never irrigated. Organic farming is not a statement of trend but a long standing commitment to nurturing a living vineyard ecosystem.
In the winery, restraint guides every decision. Cleanliness is paramount, with an understanding that native microbes drive fermentation and should be respected rather than disrupted. Wines mature in French oak for around twelve months, gaining texture and complexity without overshadowing site character. Filtration, bottling and packaging are completed on site, maintaining control and continuity.
Sustainability is achieved through focus and scale. By keeping the business small and manageable, Jasper Hill preserves the integrity of its vineyards and the authenticity of what reaches the glass, allowing Heathcote’s distinctive terroir to remain the central voice.
