Hobart Whisky is a family-owned distillery based in Hobart, Tasmania, established in 2014 their philosophy is entirely based around making whisky for them, that they love, and want to share. Despite being one of the first ten Tasmanian distilleries, they flew under the radar for quite a while, and in this time concentrated on making whisky. Not all expressions are the same and every bottle of every release is hand bottled and labelled in the distillery with each bottle having its own identifying bottle number.
Hobart Whisky bears testimony to Tasmanian malted barley, fermented with style, gently distilled with grace, then sweetly rested in hand selected oak casks. Whiskies are matured predominantly in American oak ex-bourbon casks and each small batch holds its own distinctive characteristics and signature.
This whisky has undergone a unique maturation process that has resulted in an unparalleled flavour profile. Initial maturation for three years in American oak ex-bourbon cask, imparting a rich foundation of sweetness and character. Next, it spent two and a half years in a Tasmanian Botrytis cask, infusing it with intriguing floral notes and the delicate essence of Riesling tropical fruit. To enhance complexity, depth and assist with structure and balance, it was then transferred back to an American oak ex-bourbon cask for an additional six months, allowing the flavours to harmonise and reach their full potential.
On the nose, you'll be greeted by an enticing blend of floral aromas, reminiscent of a fragrant garden, intertwined with the allure of Riesling. Further complemented by treacle, succulent strawberries, nougat, tobacco, and a hint of zesty lemon meringue. As you savour each sip, you'll discover a well-balanced combination of vanilla, a touch of light earthiness, and the lusciousness of sweet, candied red fruits. The palate comes alive with a vibrant freshness, offering the tantalising experience of lemon sherbet, mandarin salted caramel, rye spice, and an intriguing interplay between sweetness and savoury notes. A journey from green mango to dried grape, with a touch of seaweed, light smoke, and a gentle funk that adds to the whisky's character. A finish that is both exhilarating and indulgent. The light pepper spice expands on the palate, gradually revealing a thick and sumptuous fruit mince pie sensation. The experience concludes with lingering hints of molasses, dark chocolate, marmalade, caramello, and a subtle dusting of icing sugar.
