From one of our favourite Australian distilleries comes this limited edition whisky that was meant to be released for the Dark Mofo festival - cancelled due to Covid-19. This limited release single malt whisky has spent 3 years in small American oak ex-bourbon casks, before being transferred to finish for 18 months in a 200L ex-bourbon cask used to mature maple syrup. Opens with sweet toffee and warm butterscotch balanced with mature oak, a touch of leather and spice. Rich caramel and buttermilk pancakes, vanilla ice cream and maple syrup with passion fruit candy. Spicy oak on the finish rounds it out beautifully, with an almost spicy chocolate finish. Just 379 bottles made.
