Headlands Distilling Co. was founded in 2015 by four friends, with nothing more than a goal to produce unique, handcrafted spirits. Featuring two science PhD’s- Lachie and Thomas, an organic chemist/chemical engineer- Jared, and a business specialist, Dean, each member of the team brings an individual set of useful skills. Headlands Distilling Co. focuses on two main areas. Crafting delicious spirits completely from scratch on site and creating tasting experiences which have not been done before.

The first of its kind. At Headlands they take their classic gin and steep it in native Illawarra Plum fruit for 6+ months, similar to a UK sloe gin. This gin is slightly sweet and incredibly smooth. Fresh juniper and rainforest limes are paired with an array of delicious botanicals, resulting in a unique drinking experience.
