      The 2023 Domaine Samuel Billaud Les Vaillons Vieilles Vignes Chablis Premier Cru is a focused expression of Chardonnay drawn from more than sixty year old vines in the heart of the Vaillons slope on the left bank of the Serein. Rooted in classic Kimmeridgian limestone and marl, the site delivers a precise, mineral driven style with brightness and depth. The wine opens with clarity and quiet intensity, capturing the character of one of Chablis’ most recognised Premier Cru vineyards.

      Fermented in stainless steel and matured on fine lees, the 2023 release retains purity while gaining gentle texture. Citrus zest, tangerine and orchard fruit move alongside hints of oyster shell, chalk and light florals, giving the aromas both lift and definition. The palate is medium to full in weight with vibrant acidity and a chalky undertow that frames ripe fruit without heaviness. Saline drive and subtle grip carry the flavours long, making it well suited to dishes such as grilled whiting or freshly shucked oysters.
