Domaine Gérard Duplessis, a family-run estate established in 1895 and presently overseen by Lilian Duplessis, is situated in the heart of the Chablis region. The estate spans 8 hectares of vineyards, which are divided into approximately twenty plots, each imbued with its distinct character. Some of these vines have been in place for 75 years, requiring constant attention due to the demands of organic viticulture. The The estate holds 1.8 hectares across four parcels, all positioned between the 1er Cru of Vaillons and Montmains, with a northwest exposition. These parcels consist of vines aged 20 years, 45 years and two plots of 60-year-old vines. Lilian emphasizes the advantage of old vines, noting that their "experience" helps mitigate the impact of warmer weather, rendering them less susceptible to external influences. The winemaking process involves direct pressing into tank, eschewing preferment racking or setting, wild fermentation and malolactic fermentation completed in tank. The Chablis then undergoes a total aging period of 10 to 12 months in tank before bottling.
