The estate encompasses 12 hectares of vineyards across some of the most coveted appellations in the Côte de Beaune, including Meursault, Monthelie, Pommard, and Auxey-Duresses. Fabien also tends a small number of prestigious Premier and Grand Cru parcels in Puligny-Montrachet and Saint-Aubin, where vine density ranges from 8,000 to 11,000 vines per hectare. These holdings are cultivated with precision and care, using organic practices that encourage biodiversity and healthy soils. Each plot is harvested by hand at optimal ripeness to capture the natural balance between freshness and concentration.

Over 60 percent of the domaine’s vines are more than 60 years old, providing fruit with remarkable depth and complexity. The diversity of terroir across limestone, marl, and clay soils allows Fabien to craft wines that are expressive yet elegant, shaped by site rather than cellar. His Meursaults show tension and minerality, his Pommards deliver gentle power, and his whites from Puligny-Montrachet offer crystalline definition.
