      Fourth-generation winemaker Fabien Coche leads one of Meursault’s most quietly exceptional domaines. With a family lineage linked to the iconic Coche-Dury estate, Fabien has earned a reputation for precision and authenticity. Since taking over the family property in 2005, he has refined his craft through thoughtful farming, restrained cellar work, and an unwavering focus on purity. His winemaking philosophy centres on balance and patience, favouring natural expression over intervention. Each parcel is hand-harvested, pressed gently, and aged slowly to preserve the energy and individuality of the fruit.

      Fabien’s approach reflects a respect for tradition combined with a contemporary understanding of Burgundy’s evolving landscape. Farming organically since 1998, he champions low yields and minimal manipulation in both the vineyard and the cellar. Whites are aged on lees for up to 18 months to build quiet depth and texture, while reds are handled with a light touch, showing finesse rather than force.
