Chalk and sea breeze meet orchard fruit in this defining Côte de Léchet bottling. From nine hectares of southeast-facing vines above the village of Milly, Domaine Bernard Defaix shapes the most complete expression of this storied Premier Cru. As the largest landholder, and the only certified-organic grower, in Côte de Léchet, Didier Defaix has an intimate grasp of its mineral core and sunlit fruit. The 2023 vintage channels both, weaving the site’s signature saline precision with an extra thread of ripeness from the year’s warm conditions.
A quarter of the wine ferments in seasoned oak once used for the domaine’s old-vine cuvée, lending subtle breadth to the chiselled frame. The result is Chablis of crystalline clarity: white fruit purity set against a spine of chalk and crushed stone. In magnum, this Premier Cru’s structure and poise are set to unfurl over the long term, making it as compelling at the table today as it will be in a decade.

Domaine Bernard Defaix was founded in 1959 by Bernard Defaix, and today it is run by his sons, Sylvain and Didier. The estate spans 27 hectares in the Chablis region, with vineyards that include some of the finest Premier Cru sites. The Defaix family is known for its commitment to organic farming, having adopted organic practices in 2009 and officially receiving certification in 2012. The family’s dedication to quality is evident in their small but carefully tended vineyards, where they focus on maintaining soil health and promoting biodiversity. With a focus on minimal intervention, they allow the natural character of the Chablis terroir to shine through in each bottle.
