      Product Description:
      Domaine 47°N 3°E Chablis 2023 is a dry, unoaked white Burgundy produced entirely from Chardonnay grown in the Chablis appellation. The wine is made by Guillaume Michaut at his small domaine in Beines, a village situated in the heart of the Chablis region. Michaut established Domaine 47°N 3°E independently in 2018 after working within his family’s wine estate for many years. The domaine’s name refers to the geographical coordinates of Beines, reflecting his belief that vineyard origin and terroir should take precedence over the winemaker’s identity. Fruit for the Chablis comes from the Vau Brou parcel, located in a small valley outside Beines and planted with Chardonnay in 2000. The vines grow in clay-limestone soils with white marl and are cultivated according to the estate’s organic and biodynamic approach. 

      The grapes are harvested at optimal maturity and sorted immediately before pressing to ensure that only sound fruit enters the winery. Vinification takes place in an underground cellar where natural temperature regulation supports a gentle fermentation process. The clear juice is fermented in stainless-steel tanks using the yeasts and bacteria naturally present on the grapes and within the cellar. The wine is subsequently matured on its fine lees for approximately ten months, developing texture and aromatic depth without the influence of oak. Floral notes and tangy citrus define the initial profile, supported by concentrated pomelo, passion fruit and a distinctive chalky mineral character. The palate combines satisfying weight and density with lively freshness, precise acidity and a finely chiselled structure. Its balance of ripe fruit, mineral tension and refined texture makes the wine approachable in its youth while providing enough substance for medium-term cellaring.
