Domaine 47°N 3°E Chablis 1er Cru Côte de Savant 2023 is a dry white Burgundy made entirely from Chardonnay grown within the Chablis Premier Cru appellation. Côte de Savant is a specific lieu-dit within Beauroy, and winemaker Guillaume Michaut selects particular vines from the site to create this distinctive cuvée. Among the wines of Domaine 47°N 3°E, Michaut regards Côte de Savant as the bottling that most clearly bears his personal imprint. The grapes are harvested by hand and rigorously sorted to retain only the healthiest and ripest fruit. This careful selection allows Michaut to produce a richer interpretation of the vineyard while preserving the freshness and saline identity associated with Chablis. The resulting wine combines generous fruit concentration with mineral tension, natural acidity and carefully integrated oak.
Following pressing, the juice undergoes natural settling at a low temperature for approximately 36 hours. The clear juice is then transferred to 500-litre Burgundian oak demi-muids, where natural alcoholic and malolactic fermentations take place. The wine remains in these large-format barrels for approximately 12 months, allowing its texture and aromatic complexity to develop without overwhelming its underlying fruit. It is lightly filtered before bottling to preserve clarity while retaining character and structure. The 2023 vintage presents ripe citrus, apple, stone fruit and delicate floral nuances supported by chalky minerality and subtle oak. Its concentrated palate is balanced by firm acidity and a distinctive saline freshness. A broad, full-bodied texture gives the wine presence, while the mineral core keeps the composition focused and energetic. The finish is long and persistent, carrying ripe citrus, wet stone, restrained oak and a satisfying marine quality.
