      In 1668, Dom Pierre Pérignon was appointed procurator at the Abbey of Hautvillers, and for the next 47 years he pursued a single, uncompromising ambition: to make the best wine in the world.       Every Dom Pérignon release answers to the same constraint: the vintage itself. The House exists to bear witness to a single year's harvest, whatever that year brings, even when the honest answer is not to declare a vintage at all.       Dom Pierre Pérignon's own legacy is often reduced to myth, credited with inventing Champagne outright or, more strangely, remembered as a blind monk. Neither is true. What is true is the scale of his innovation: a gentler press that could draw clear, still white wine from black grapes; an early understanding of Champagne's marginal climate and the value of blending across vineyards; stronger English glass bottles built to survive pressure; and the reintroduction of cork as a dependable seal. Between them, these advances didn't just shape Champagne. They shaped the modern wine world.
