Dalwhinnie 30 Year Old Scotch Whisky Special Release 2019
This small batch of Dalwhinnie enjoys rich layers of flavour, developed over thirty years of maturation in refill hogsheds and butts. They have brought to a peak of perfection the moorland aromas and smoothly sweet, yet also surprisingly peppery, tastes that define the distillery character.
The nose on this whisky is mild overall with a light prickle. The top notes are faintly smoky and vegetal, as with a snuffed candle, almost like a Halloween pumpkin lantern. The overall impression is a light sweetness and savoury with a suggestion of moorland heather pollen. The based notes are of spicy, fresh-planed wood, and adding a drop of water changes to a light balsa wood. Then turning sweeter with fruity, tangy notes of pickled ginger. The palate has a natural strength that has a creamy-smooth and mouth-filling texture. It has a waxy, sweet initial taste and is spicy with a touch of salt. It gradually builds a peppery warmth carrying into the finish. A drop of water it becomes more sweet and smoothly balanced. The finish is long and spicily warming, leaving the tongue tingling and a pleasantly earthy aftertaste.
From the highest distillery in Scotland, part of her coldest inhabited community, Dalwhinnie is a real mountain malt. It is as well adapted to the harsh climate of its barren and often desolate location as the mountain hares that abound in the surrounding hills.
