The Ca’Montini Pinot Grigio comes from a single vineyard called “Terre di Valfredda”, (meaning cold valley) in Ala, Trentino. The traditional Pergola trellising system is used predominantly with white grapes to protect the grapes from too much sun and possible sunburn and promote airflow through the canopy to prevent disease pressure and create a cooling effect. Once the fruit arrives in the winery all bunches are hand sorted, chilled down and gently whole bunch pressed to tank. All juice is fermented using indigenous yeast in stainless steel tank and does not go through malolactic fermentation to retain freshness and purity of fruit.
