Perfume, texture and restrained power define By Farr Viognier 2025, an expressive white wine from one of Geelong’s benchmark family estates. The wine is grown and made by the Farr family at Bannockburn in the Moorabool Valley, a cool-climate part of Victoria’s Geelong region known for producing structured, site-driven wines. By Farr has been producing wines since 1994, with a philosophy centred on minimal intervention and allowing the fruit to reflect the land and the season. The Viognier is drawn from two vineyard sources: the original house block, planted in 1994 on friable red soil over limestone and sandstone, and a younger planting in red ironstone soil. Because Viognier can become broad and sun-affected, the fruit is picked earlier to retain natural acidity and preserve varietal character. Winemaking is deliberately textural, beginning with foot stomping and a short period of skin contact to draw out phenolics, flavour and structure.
The fruit is then pressed, cooled and transferred directly to barrel with solids for natural fermentation. Gentle stirring toward the end of autumn encourages malolactic fermentation, softening the finish while retaining the wine’s freshness. The 2025 vintage at By Farr was fast moving after a sporadic growing season, with higher malic acid in the whites contributing detail and austerity. In the glass, the wine shows Viognier’s aromatic stone-fruit signature through peach, apricot and subtle floral lift, balanced by ginger-like freshness and a restrained savoury frame. The palate carries richness without heaviness, combining supple texture, natural acidity and underlying power. Although appealing in youth, it should benefit from bottle age as the acidity settles and the fruit expression becomes more layered.
