      A rare still Pinot Noir from Champagne’s famed slopes. The 2019 Bollinger La Côte aux Enfants Pinot Noir is drawn exclusively from a single vineyard in Aÿ, a site so prized it also contributes to Bollinger’s prestige Champagne, Vieilles Vignes Françaises. Here, Pinot Noir takes a still form under the Coteaux Champenois appellation, offering a unique expression of Bollinger’s Burgundian leanings. Deeply structured and quietly powerful, it brings the minerality of Champagne’s chalk soils into sharp red-fruited focus, with complexity built through whole-cluster fermentation and élevage in small oak barrels.

      The La Côte aux Enfants parcel was replanted by Bollinger in the 20th century after phylloxera had devastated the region. Grown on steep slopes of clay over chalk, the vineyard is farmed with precision to produce low yields of concentrated fruit. Grapes are hand-harvested, then vinified using methods more typical of top Côte de Nuits producers. Whole-bunch fermentations, wild yeasts, and extended time in oak. The aim is clarity of place: Pinot Noir from Champagne, not as a base for bubbles, but as a pure, still red wine of poise and longevity.

      Made in limited quantities, the 2019 vintage is rich in dark cherry, spice and floral detail, yet remains taut and mineral across the palate. Its depth and savoury persistence make it an ideal pairing for roast duck, mushroom ragoût or game birds. This is Bollinger as few have tasted it —complex, grounded and resolutely terroir-driven.
