This release is vibrant yet contemplative. The oak presence is pronounced but refined, allowing for a seamless interplay between warm spices and fruit. Huon pine lifts the spirit with an alpine freshness, adding a herby complexity. You’ll discover deep leather, charred corn, and sizzled butter, all closing out with earthy baking spices, cedar, and a coffee-ground finish. Matured for 16 years in a single 200L American oak ex-Bourbon cask, this release is bottled at 48.2% ABV and yields just 195 bottles.
Sullivans Cove’s Second-Fill casks are a truly special part of the distillery. Select American Oak and French Oak barrels are refilled to provide a gentler oak profile, allowing the spirit to shine. Philosophy:
Distilled in Hobart, Tasmania, Sullivans Cove single malt is made using traditional methods and 100% Tasmanian ingredients. Inspired by nature and patiently aged, Sullivans Cove distillers seek the sublime. Each cask is nurtured to its natural peak, with thousands of tiny decisions helping each batch reach its full potential. No two batches are the same, making every release an opportunity for exploration.
Tasmania’s pure, clean water and fertile barley-growing land make it an ideal location for producing world-class whisky. This combination of high-quality water and grain is the foundation of all Sullivans Cove whiskies.
All Sullivans Cove whiskies are made from 100% Tasmanian malted barley. The wash is brewed locally by experienced brewers and then double-distilled in a unique Tasmanian-built pot still, affectionately known as "Myrtle." The first distillation, known as the "wash run," produces low wines of around 20% ABV, which are then distilled again during the "spirit run" to produce a spirit of around 70% ABV. This spirit is diluted to 63.5% ABV before being placed in casks for ageing.
Most whiskies are aged in either 200L American oak ex-bourbon barrels or 300L French oak ex-tawny barrels, maturing for many years in Tasmania’s unique climate—typically between nine and eighteen years.
Nose - Tropical, Blackberry Jam, Marjoram Herbs
Kaffir lime leaf adds a bright, zesty edge, while earthy oak spices emerge - cedar, coffee, black pepper, and cinnamon, grounding the experience. There’s a deep leather note.
Palate - Fresh Baked Biscuits, Buttery Charred Corn, Vanilla Sponge
Clove weave through layers of bay leaf and black pepper, leading into the warmth of toasted sourdough and freshly baked biscuits.
Finish - Werther's Originals, Cola, Spice and Herbal Lift
Werther’s Originals and pickled walnuts offer an intriguing juxtaposition of sweet and briny, hinting at the spirit's complexity. Piney aromas and fresh herbs add a fresh twist to a wonderfully decadent dram.
