Distilled in Hobart, Tasmania, Sullivans Cove single malt whisky is made using traditional methods and 100% Tasmanian ingredients. Inspired by nature and patiently aged, Sullivans Cove distillers seek to craft the sublime. Each cask is nurtured to its natural peak, with thousands of tiny decisions shaping the whisky. No two batches are the same, making each release an opportunity for exploration.
Tasmania’s pure, clean water and rich barley-growing land make it an ideal location for producing world-class whisky. This combination of high-quality water and grain is the foundation of all Sullivans Cove whiskies.
All Sullivans Cove whiskies are made from 100% Tasmanian malted barley. The wash is brewed locally by experienced brewers and then double-distilled in a unique Tasmanian-built pot still, affectionately known as "Myrtle." The first distillation, known as the "wash run," produces low wines of around 20% ABV, which are then distilled again during the "spirit run" to produce a spirit of around 70% ABV. This spirit is diluted to 63.5% ABV before entering the casks for ageing.
Most whiskies are aged in either 200L American oak ex-bourbon barrels or 300L French oak ex-tawny barrels, maturing for many years in Tasmania’s unique climate—typically between nine and eighteen years.

Dried apple wheels blend with vanilla seeds. The sweetness is enhanced by white chocolate and buttery shortbread, with sugared almonds adding a nutty touch. A bright burst of orange blossom water in the corners brings a lively, floral note.
Finish - Crème Pâtissière, Pomelo, Brown Sugars
A sweet, ripe grapefruit leaning towards pomelo adds a citrusy brightness. The finish is rounded out with rich, browned sugars, evoking sticky date.
