Fruit was hand-picked at optimal ripeness, gently destemmed, and fermented in small stainless-steel vats, with careful temperature control and gentle plunging to extract fine tannin and colour. Following fermentation, the wine spent around eighteen months in French oak barriques, roughly eighteen per cent new, before bottling. This slow maturation allows the fruit to knit with savoury oak spice and fine tannins, giving the wine both immediacy and cellaring potential.
The 2023 vintage is particularly balanced, showing lifted aromatics, supple mid-palate weight, and a lingering, savoury finish.
