Whole-bunch Shiraz from Eden Valley’s rocky heights—intense, cerebral, and destined for the cellar.
The 2020 Lamella Shiraz is the most refined and mineral of Dan Standish’s releases, drawn entirely from the Angas family’s Hutton Vale Farm vineyard in Eden Valley. Made with 100% whole bunches and cuttings traced to the legendary Mt. Edelstone vineyard, Lamella is a wine of immense power, delivered with restraint. It’s a slow burn—introverted at first, then expansive, vivid and incredibly detailed with time in the glass or decanter.
Expect a finely tuned structure: dark fruit cloaked in florals, savoury herbs, crushed granite and graphite, with a glint of bitter chocolate and spice. Tannin is firm, grippy and architectural, while the acidity keeps everything fresh and lifted. As ever with Standish, the best barrels are hand-selected after extensive maturation, with the rest sold off—only the most compelling material makes it into the final wine.
This is one for the long haul—cellar comfortably until 2050 and beyond. If opening young, allow at least 48 hours in a decanter. Best with richly spiced slow-cooked meats or aged hard cheeses.

The Eden Valley fruit gives a unique cool fruit character of blue fruits, iron and white pepper… Fantastic length.
Unfurling at a glacial pace… texturally, Lamella is one of those wines that delivers immediate impact… jaw-dropping complexity.
Possessed of a galaxy of flavor, pintucked into folds of texture… volumes of flavor and pillowy texture—it really does have it all.
Founded in 1999 by sixth-generation Barossan Dan Standish, The Standish Wine Company is a small-batch producer with serious intent. After refining his craft at Torbreck and in the vineyards of the Rhône, Rioja and Sonoma, Dan returned to South Australia to focus on site-driven Shiraz from Eden and Barossa Valleys.
Each vineyard parcel is fermented separately, and up to 80% of the blend may be discarded—only the most compelling barrels make the final cut. It’s a fiercely selective approach that delivers wines of both clarity and depth, intensity and finesse.
Alongside Dan, Nicole Standish drives the technical and viticultural precision that underpins the brand. Together they favour whole-bunch ferments, wild yeasts, natural cork, and extended élevage in French oak (18–22 months). These choices shape Lamella into a distinctive expression of site: structured, aromatic, and built to age.
At the core of The Standish Wine Company is a belief in precision without compromise, and in letting great sites speak for themselves. Dan Standish’s philosophy is grounded in minimal intervention—wild ferments, whole-bunch inclusion, no fining or filtration—and an unwavering focus on vineyard expression over winemaking signature.
Lamella, drawn from cooler Eden Valley plots like Hutton Vale and Stonegarden, leans into its origins with savoury detail, floral lift and mineral tension. Each vintage is vinified and assessed barrel by barrel, with only the most expressive components chosen for final bottling. It’s a rigorous process that favours quiet power over brute force.
The result is Shiraz that captures nuance and structure, designed not just for immediacy, but for long-haul cellaring. Every bottle is a distillation of time, place and intention—made with patience, and built to reward it.
Violets, black raspberry, anise and graphite meet savoury tones of bay leaf, dark chocolate and earth.
Concentrated layers of mulberry, cassis, bitter orange and liquorice unfold slowly over a taut mineral core.
A firm spine of tannin carries through spice, herbs and stony detail in an expansive, persistent finish.
