      Bin 707 is Penfolds Cabernet Sauvignon Grange equivalent: ripe, intensely-flavoured fruit; completing fermentation and matured in new American oak; and expressing the Penfolds policy of multi-vineyard, multi-region fruit sourcing. Named by an ex-Qantas marketing man, Bin 707 was first vintaged in 1964. The wine was not made from 1970 to 1975 (when the focus shifted to Bin 389) nor in 1981, 1995, 2000 or 2003 (when fruit of the required style and quality was not available). Full bodied and with good cellaring potential, Bin 707 has a secure place among the ranks of Australia's finest Cabernets. This is a wine of depth and layers of flavour, at a sensible alcohol level. 2004 was an excellent year for first class Cabernet, and this is a great Bin 707. With no 2003 Bin 707 released, the 2004 marks a welcome return.

      The 2004 Cabernet Sauvignon 'Bin 707' is one of the Penfolds' flagship wines. It was aged for 15 months in 100% new American oak. Opaque purple/black, it exhibits a classic Cabernet nose of cedar, tobacco, spice box, black currant, and blackberry liqueur. Medium-bodied (13.5% alcohol) but dense and concentrated, with tons of black fruit flavor, the wine is tightly knit, structured, beautifully balanced, and very promising. It needs a minimum of 10-12 years of cellaring and should provide pleasure through 2040. Penfolds, arguably Australia's most famous winery, continues to perform at a high level under the leadership of Head Winemaker, Peter Gago.

      A long, seamless and very sophisticated cabernet despite its significant dimensions, structure and power. It opens with an intense violet-like perfume of aromatic cassis, blackberries and dark plums over dark chocolate and mocha-like oak, with meaty, briary undertones. Simultaneously very firm and cultivated, it's steeped in piercing flavours of blackberries, dark plums and cassis, and backed by very smart oak and robust, pliant tannins. It's long and savoury, with a lingering core of explosive dark fruit and dusty, dried herb-liked nuances. A genuine Bin 707.

      Penfolds

      Penfolds has been a pioneer in the world of winemaking since its establishment in 1844 by Dr. Christopher and Mary Penfold. The company's success has been driven by a lineage of visionary winemakers who have pushed the development of the company to extraordinary, bold new heights. Mary Penfold's reign at the helm of Penfolds saw years of determination and endeavour, experimenting with new methods in wine production. In 1948, Max Schubert became the company's first Chief Winemaker and he propelled Penfolds onto the global stage with his experimentation of long-lasting wines - the creation of Penfolds Grange in the 1950s. Soon, the medals began flowing, and Grange quickly became one of the most revered wines around the world. In 2012, Penfolds released its most innovative project to date - 12 handcrafted ampoules of the rare 2004 Kalimna Block Cabernet Sauvignon. Today, Penfolds continues to hold dear the philosophies and legends that have driven the company's success since its establishment in 1844.

      NOSE
      Spice Box, Raspberry Coulis, Black Olive

      The nose shows fruit to the fore, although much more: cassis, raspberry coulis, an underlay of red liquorice, black olive, soy and artefacts of well hidden oak. Youthful, lively and alluring! 

      PALATE
      Lush, Marmalade, Tight Knit

      Textured, lush and chewy, with an even coating of talc-like tannins, the palate has a compression of flavour, without heaviness or over extraction...marmalade, orange and tangerine citrus notes align with those that decry Cabernet.

      FINISH
      Poised, Talc-like Tannin, Dried Herbs

      Oaky and robust, pliant tannins. Its long and savoury, with a lingering core of explosive dark fruit and dusty, dried herb-liked nuances.
